I have made it my mission to cook more. So I finally tried out some recipes that had been sitting under my "to try" tab in my recipe box for awhile.
First up was Triple Mac w/Ham.
Personally, I wasn't a fan. Joey liked it ok, but it will not be officially incorporated into my recipe box. The texture was grainy (due to the recipe calling for flour, I suppose), and the unusual types of cheese used (white cheddar, monty jack, and asiago) didn't really seem to suit mac and cheese to me.
Next up was Confetti Salad, with pineapple sausage.
This is much more of a summer dish, but I have been really wanting to try it, so I made it anyway. It uses black eyed peas, which I'm not a fan of. But I loved this salad. It has every color from brown to green- black eyed pease, tomatoes, carrots, yellow bell pepper, celery- and a honey vinegar dressing. Yum! Definitely stays in the recipe box.
Third was a cheesy onion mash.
This was *really* good. It's basically a mashed baby gold potato with caramelized onions and cheeses mixed throughout. In the box!
Last was the dish I made today, which unfortunately I forgot to take a picture of. It was called Pasta e Ceci soup. It contained tomatoes, carrots, chickpeas, rosemary, thyme, and tiny pasta. Sadly, this was a major disappointment. It ended up being really bland, in my opinion. Poor Joey is stuck with the leftovers for at least 2 more meals, but he seemed to think it tasted ok, so no worries. This recipe is not staying in the box, though. I mean, shouldn't we both have to like it??? ;)
